Chile Mora (även rojo mora) är en mindre skrynklig variant av chipotle (rökt jalapeño). Färgen är dock mer brunröd, röksmaken mildare och styrkan mer intensiv.

Bland de mest kända recepten ingår chile mora i enchiladas, taquitos, buritos, quesadillas och andra rätter med tortillas. Mora betyder björnbär på spanska.

 

Often confused with true chipotle, moras are made from ripe jalapeños hat have been smoked and dried.
